Ingredients for the salad (2 servings) :

  • Around 8-10 cups of lettuce or your preferred salad greens
  • 1 large avocado, sliced
  • 1/4 red onion, finely sliced
  • Cucumber, sliced
  • Cherry tomatoes, Sliced
  • Fresh cilantro leaves, chopped

 

Ingredients for the grilled salmon:

  • 2 salmon fillets
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt

 

Ingredient for the spicy cilantro dressing:

  • Juice of 2 limes
  • 2 tbsp of olive oil
  • 1 diced hot pepper (for a non-spicy variation, use a small, sweet pepper)
  • 1 tsp ground cumin (adjust to taste)
  • 2 tbsp finely chopped cilantro
  • Salt to taste

 

Method: 

 

For the grilled (or airfried) salmon:

  1. Rub salmon fillets with the spice mix (salt, coriander, cumin, paprika, onion powder, and black pepper).
  2. Grill to your preferred doneness.

 

For the spicy Lime cilantro dressing:

  1. In a jar, combine lime juice, olive oil, diced hot pepper (or sweet pepper), ground cumin, chopped cilantro, and salt.
  2. Close the jar and shake well.

 

Assembling the Salad:

  • In a salad bowl, place the vegetables and top the salad with grilled salmon. Drizzle the dressing over the salad.
  • Serve immediately.
