Stuffed Sweet Potato with minced meat.

If you are bored of with the same old spaghetti bolognaise this recipe will satisfy for sure. Stuffed sweet potato is an easy and quick recipe and if you have already leftover mince meat you can easily use it and enjoy a delicious lunch or dinner.

 

Ingredients for 2 servings: 

 

  • 2 Sweet Potatoes (250g each)

 

For Stuffing:

  • 300g minced lean pork
  • 200 ml tomato juice
  • 1 tsp of tomato paste
  • ½ bunch of chopped parsley
  • 100g. light edam cheese
  • 1 onion, chopped
  • 1 fresh onion
  • 2 tbsp olive oil
  • ½ tsp of cinnamon
  • ½ tsp of sugar
  • ½ tsp chilli flakes
  • salt/pepper

 

cup: 250ml                                         tbsp.: 1 tablespoon 15 ml                                  tsp.: 1 teaspoon  5 ml

 

Method: 

  1. Preheat your oven at 180 C. Wash the sweet potatoes, wrap them in aluminum foil and bake.
  2. Pour 1 tbsp of olive oil into a small pot and as soon as its boil a little bit add the minced meat and the chopped onion, and stir slowly.
  3. Add the chopped parsley, cinnamon, pepper, salt, and chili flakes.
  4. Pour the tomato juice, tomato paste and ½ teaspoon of sugar (optional if the sauce is more sour).
  5. Lower the heat, leave for 20-30 minutes and stir.
  6. At the end, add the grated cheese and the spring onion.
  7. Τurn off the oven (40 minutes after the sweet potato has been cooked), cut the potato in half and put ½ filling of the sweet potato in the pot with the minced meat and mix all together.
  8. To serve, fill the potato with the stuffing and sprinkle with spring onion and chili flakes.
