Fig roll oat bars

Ingredients for 16 bars:

  • 280g dried figs or dates
  • 50g apricots or raisins
  • ½ cup hazelnut butter  (or any other type of nut butter)
  • 2 tbsp pumpkin seeds and/or sunflower seeds
  • 150g oats
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • Melted dark chocolate to drizzle on top

 

 

Method:

  1. Line an 18cm square baking tin with a baking sheet.
  2. In a food processor, pulse the chopped figs and apricots until chopped to small pieces.
  3. Add the rolled oats, hazelnut butter, pumpkin seeds, cinnamon, and nutmeg to the food processor. Pulse until they form a sticky dough.
  4. Press the mixture firmly and evenly into the prepared tin.
  5. Cover and place in the fridge for 1 hour or in the freezer for 30 minutes. When set, cut into 16 squares and store in an airtight container for up to 5 days.
  6. Drizzle melted dark chocolate on top.
