Mushroom soup

Ingredients for 2 servings 

  • 400g mushrooms
  • 1 finely chopped onion
  • 2 leeks (white part only) finely chopped
  • 2 tbsp olive oil
  • 400ml coconut milk
  • 100ml warm water
  • salt
  • pepper

 

tbsp: 1 tablespoon 15ml

 

 

Method 

1. Add the olive oil, leeks onion and mushrooms to a saucepan.

2. Stir frequently until cooked through.

3. Add the salt and milk and bring to a boil.

4. Add the pepper and 100ml of hot water and let it boil for 30 minutes.

5. Remove from heat and set aside for 10 minutes to cool off.

6. Then, with the help of a blender, puree the vegetables to make a slightly thick soup.

 

 

Dietitian’s Tip: To complete your meal, add a few spoons of wholemeal croutons and 1 tablespoon of yogurt or cottage cheese.
