Omelette with Quaker Oats

A very tasty and satisfying breakfast. This omelet is a complete meal since it contains food from all groups; eggs for protein, cheese for dairy, veggies and oats for grains! It can also be given to babies from one year and above as finger food. Do try this out!

 

Ingredients (for 1 serving): 

  • 1/4 cup Quaker Oats
  • 2 eggs
  • 1/4 cup milk
  • 30g cheese <15% fat, grated
  • ½ onion, chopped
  • ½  tomato, chopped
  • ½  carrot, grated
  • ½ green pepper, chopped
  • ½ orange/red pepper, chopped
  • ½  garlic clove, crushed
  • 1/4 cup cherry tomatoes (divided)
  • Salt, pepper
  • Oregano
  • 1 tbsp olive oil

* cup: cup 250ml ,   tbsp: tablespoon 15ml,   tsp: teaspoon 5 ml 

 

Method: 

  1. Grind the Quaker Oats in a blender until a powder texture is formed.
  2. Add the milk  and a pinch of salt and pepper, and mix. 
  3. Break the eggs in a  separate bowl and beat well with a whisk. Add the oat mixture and mix again.
  4. In a small pan, sauté all the vegetables for 5-7 minutes, and set aside.
  5. Spread a  large non-stick pan with olive oil and add the oatmeal mixture 
  6. Cook for about 4-5 minutes.
  7. Once the mixture is cooked (no need to turn the omelet), serve on a round plate.
  8. Add the cheese and the vegetables.
  9. Fold the omelet in half and serve!

 

Dietitian’s Tip: Serve your omelet with a salad of your choice to improve the fiber content of your dish.
